History of Pancho's
In the mid-1970s, the Rubio family opened a restaurant in their home town of Brookings called Rubio's Mexican Restaurant. One of their family recipes was for the wonderful Rubio's Salsa, which was made on site and sold in local grocery stores. In 2001, the business was purchased by Pancho Garcia and his wife Yolanda, who had worked in Rubio's. While maintaining the wonderful Rubio family recipes, the couple also introduced the distinctive flavorings of the small town near Puerto Vallarta, Mexico where they had been born and raised.
In 2006, the Garcia's brought in new partners, who shared their vision of a local restaurant that would serve the finest quality Mexican foods at reasonable prices in a delightful traditional setting. The restaurant closed down for a short period to undergo extensive remodeling. A beautiful handcrafted myrtle-wood bar, made by a local artisan, was installed. The walls were decorated with paintings by Mexican artists and a local artist created original window paintings. A paved parking area and a covered heated patio that allows for outdoor seating for most of the year were added. And so on June 21 2006, the restaurant re-opened as Pancho's Restaurante y Cantina. |
